Vinéa Oak Adjuncts Cheat Sheet

For many people, understanding Oak Adjuncts is akin to walking into a vector calculus class when you signed up for algebra. With the multitude of toasts, wood sizes and oak integration times, even Einstein would still be hammering out calculations. Here is a quick guide (cheat sheet) to help answer some of your questions!

VINEA Head off barrel inserts

-Used to refresh old cooperage in your cellar for a bargain

-Easy to use, you don’t even know it is there

-Excellent for oak integration on barrel fermented whites

-Can be installed by our cooperage partners at your winery!

VINEA Bunghole Oak Inserts

-Simplest to use, they attach to the bottom of the bung for easy addition

-Range from 60-100% new barrel impact

-Once desired oak impact is achieved, you can quicky remove it.

VINEA Oak Chips

- smallest size commonly available, found in toasted and untoasted versions.

-Untoasted Chips are commonly used to mitigate green flavors in must, juice or wine and stabilize color.

 -Toasted Chips help build mouthfeel early and are good for a late profiling of finished wine.

-Dosage rates vary from 1-10 g/L depending on application.  3 g/L typical for fermentation. Bench trials necessary finishing touchups

VINEA Oak Segments

- For tank aged reds and whites, these integrate well in the 3-6 month time frame.

- Typically come in immersion bags for ease of use. Put in tank before filling!

- Can combine toasts to make your own special blend.

- Typically come in a 22 pound bag which gives 100% new barrel impact to 160 gallons.

VINEA Tank Fans

-The largest format and most akin to the impact from a barrel for tank aged wines.

-Staves are toasted on both sides and arrayed on a wire or teepeed in the tank.

-Recommended for minimum 6 months integration time, up to 12 months.

-One fan is usually 15-25 staves for 100% new barrel impact on 90 gallons.
